Healthy Eating Holiday Recipe

These baked apples have become a favorite dessert as prepared by our clients in our community residences.  The recipes were developed for a typical 18-24 resident program; ingredients have been altered below for home use.
Baked Apples
(serves 4-6)

Ingredients
4-6 apples
½ cup of raisins
2 Tbsp unsalted butter at room temperatue
2 Tbsp light brown sugar
8 oz. container of non-fat vanilla yogurt
Directions
1.       Preheat oven to 375 F
2.       Cut apples in half lengthwise, leaving skin on
3.       Using a teaspoon or melon baller, remove seeds and core apple halves
4.       Spray a baking pan that has raised sides with non-fat cooking spray
5.       Place apple halves in pan, cut side up, sprinkle with raisins and sugar, dot each apple half with some of the butter
6.       Cover loosely with foil and bake until tender 25-30 minutes.
7.       Remove apples and raisins from the pan and place in serving bowls; pour juice from the pan over apples and serve with vanilla yogurt.
