Recipe from The White House

Over the summer we sent First Lady, Michelle Obama a copy of our "How-To" Urban Farm Curriculum Guide as a resource to help her plant the first garden on White House grounds since Eleanor Roosevelt.
At The Bridge we share her concerns as many of our clients have diabetes and/or don't have access to healthy meals. Our solution? A collaboration with The Horticultural Society of New York to create TWO urban farms. Not only have the urban farms in East Harlem and the Bronx trained clients in horticultural skills, but they have provided our residences with fresh fruits and vegetables - reinforcing the importance of nutrition and eating healthy.

In return she has sent us her favorite recipe for Cucumber Soup (which uses ingredients from The White House Garden) along with a letter (see below) thanking us for the guide and reinforcing the message of eating healthy meals to lead healthy lives. One of the concerns she addresses in her letter is community access to fresh fruits and vegetables - "in many communities, fresh healthy food is simply out of reach" she states.At The Bridge we share her concerns as many of our clients have diabetes and/or don't have access to healthy meals.
